No-Bake Chocolate Date Energy Bites

Chocolatey, naturally sweet and wonderfully easy to make, these no-bake energy bites are perfect for lunchboxes, afternoon snacks or a quick bite on the go.

They come together in around 15 minutes and feature six versatile wholefood ingredients you can keep using long after the first batch disappears.

Ingredients

Method

  1. If the dates feel firm or dry, cover them with warm water and leave them to soften for 10 minutes. Drain thoroughly before using.

  2. Add the almonds to a food processor and pulse until they resemble coarse crumbs.

  3. Add the dates, cacao powder, chia seeds, two tablespoons of desiccated coconut and cinnamon.

  4. Process until the mixture begins to clump together. If it remains crumbly, add water one teaspoon at a time until it holds together when pressed.

  5. Roll tablespoon-sized portions between your hands to form 14–16 balls.

  6. Place the remaining desiccated coconut in a shallow bowl and roll each bite through it to coat.

  7. Refrigerate for 30 minutes to firm up, then enjoy.

Storage

Store the energy bites in an airtight container in the fridge for up to one week. They can also be frozen for up to two months—simply let them soften for a few minutes before eating.

Easy variations

  • Add a spoonful of peanut butter for extra richness.
  • Mix in cacao nibs for a little chocolate crunch.
  • Swap some of the almonds for walnuts or cashews.
  • Add a small amount of orange zest for a chocolate-orange version.
